Sweet Potatoes for Thanksgiving Dinner

Not the one hosting Thanksgiving Dinner this year, but for those of you that are cooking, here are two quick recipe ideas for your sweet potatoes dish this year:

Sweet Potatoes with Marshmallows

Korean Sweet Potatoes

Sweet Potatoes with Marshmallows

Ingredients Cooking Potatoes:6 medium sizes sweet potatoesBoiled salted waterSauce:

¼ cup of brown sugar

½ stick of butter

1 bag of small marshmallows


Before you begin
  1. Wash the sweet potatoes thoroughly
Recipe Step 1:Preparing the potatoes

  1. In a large pot bring to boil salted water and sweet potatoes with their skin on. Note: the potatoes should be cooked through but not supper soft since you will be cooking them in the oven later on
  2. Drain and let the potatoes cool
  3. Peel the potatoes and cut into ½ inch thick discs

Step 2: Making the Sauce:

  1. In the sauce pan melt butter completely
  2. Stir in the marshmallows and brown sugar
  3. Stir until the marshmallows have melted. Note: The sauce will be thick, very sweet and sticky

Step 3: Put it all in the oven:

  1. Preheat the oven to 400F
  2. Put the cut discs of potatoes into oven proof backing dish
  3. Pour the sauce over the potatoes
  4. Add a few more marshmallows on top, this is optional
  5. Bake for 15 – 20 minutes, or until the potatoes have completely softened up


Korean Sweet Potatoes

Ingredients 6 medium sized Korean sweet potatoes, can substitute regular sweet potatoes¼ cup of brown sugar½ stick of butter¼ cup soy sauce

Roasted Sesame Seeds


Before you begin
  1. Wash the sweet potatoes thoroughly
  2. Cut up into discs with skin still on and put into cold water. This is to preserve their color
Recipe Step 1: In a frying pan melt butter with brown sugar over medium high heat.

Step 2: Add the potatoes to the pan and cover

Step 3: With cover on shake the pan to coat the potatoes with the sugar mixture

Step 4: Open the lid and pour soy sauce, continue to cook the potatoes uncovered, mixing it a bit so they don’t stick to the pan

Step 5: Remove from heat, place in a serving dish and sprinkle with sesame seeds
