Summer Pizza

Another nice summer meal is pizza, especially when having  family over for a visit. Many of your home grown ingredients can be used as a topping, like basel leaves or freshly picked tomatoes.

For the pizza pie:

2 cups of flour, 1/2 tablespoon of active dry  yeast, 1 cup of warm water, 2 teaspoons of salt, 3 tablespoons of olive oil

Step 1: Add all of the ingredients together in a bowl. Mix to form a dough ball. I use chopsticks to do all the mixing with. Add a flour throughout, your dough should be soft and not sticky.

Step 2:Lightly grease the dough ball with olive oil, cover with a towel and leave in the bowl to rise for about 30 minutes.While you wait you can empty your dishwasher, clean up the mess from the flour or if you are like me jump on a conference call.

Step 3: Pre-heat oven to about 500 degrees. Leave the pizza stone or a backing sheet in the oven to heat

Step 4: Once your dough has risen, place it on a flour covered wooden board to knead. Shape into a ball and cut in half, to make two pizza pies. Store one of the pizza pies in a fridge to use for later, you can also freeze it. If making both pies right away, place the pie that you are not working on back into the bowl again and cover with a towel.

Step 5: Roll out your dough into a circle, add flower to the board and rolling pin to prevent dough from sticking.

Step 6: Place your rolled out pie on to the foil. Raise the edges by tucking some of the dough underneath. Poke the flat part of the pie with a fork throughout.

Step 7: Spread olive oil all over the top of the pie and sprinkle with shreaded cheese of your choice and minced gralic

Step 8: Place foil on top of the heated pizza stone or backing sheet. Bake for about 10 to 12 minutes, until cheese turns golden.

For the topping

Mushroom Topping:

Saute mushrooms in olive oil with chopped 1 clove of garlic. Remove pre-baked pizza pie and sprinkle on mushrooms, basel leaves and grated cheese. Grease the crust with olive oil and sprinkle some over the topping. Bake for another 8 to 10 minutes

Artichokes with Tomatoes topping:

 

20160802_131529Remove pre-baked pizza pie and sprinkle on cut up chopped artichoke hearts (from a jar), chopped up fresh tomatoes, basel leaves and grated cheese. Grease the crust with olive oil and sprinkle some over the topping. Bake for another 8 to 10 minutes

Serve while hot by placing the foil with a pizza over a wooden board. Enjoy with your whole family and friends.
